1993 Cabernet Sauvignon, Proprietor's Reserve (Special Library Release)

It's not very often you have the opportunity for a lovely Cabernet Sauvignon harvested 24 years ago with a good 22 years bottle aging!  As a special treat for this harvest month, we are making available a few of our 1993 Proprietor's Reserve Cabernet Sauvignon.  


We recommend an "Ah-So" opener for library wines, the two-pronged one you wiggle down between the cork and neck of the bottle, turning gently as you ease out that also-aged natural closure.  Once open, you may decant the bottle OR let it breathe 30 minutes or so before pouring.  When you do, you are greeted by a still-lovely garnet color in your glass.  Swirling brings out aromas of macerated plums and red stone fruit, gremolata, and an edge of cedar.  As you sip, you may find ripe bing cherry notes, complimented by plums, cassis, and a hint of eucalyptus before resting with a soft, smooth finish.   This wine opens up nicely!  A tender filet mignon or an unctuous, creamy blue cheese would be lovely pairings.  This wine is available in our Tasting Room or online at $75/bottle; $60 for Club members.
