2015 Test Pilot P-61 Black Widow

Tasting Notes

This delicious wine is a clear, crisp straw color in your glass with aromas of juicy stonefruit, a drop of citrus, and floral notes.  Lush peaches, apricots, and a splash of lemon butter grace the palate, followed by a smooth finish.  Fabulous with lobster!

Fermentation and Cellar

The Chardonnay was picked and pressed back to back in two lots – upper and lower Gravel Ridge Vineyard, on September 1 and 2; the Viognier on September 3.  The two Chardonnay lots were whole-cluster pressed, settled overnight, then transferred to French oak barrels (33% new) for native yeast and malolactic fermentations; the Viognier was pressed and settled, then fermented in a temperature-controlled stainless tank for a slow and cool weeks-long alcohol fermentation, but no malolactic.  The components were blended in April, then returned to barrel for further aging and integration. 122 cases produced, 14.3% abv.

In 2015 2015 we began to emerge from the drought with 22.9 inches of rainfall (80% of average). The warm summer stressed the vines early which accelerated ripening and concentrated the fruit flavors in the grapes. Harvest started with Pinot Noir on August 17, then it was a fast and furious September: Chardonnay and Viognier, then Cabernet Sauvignon, Syrah and Merlot, and finally Cabernet Franc on September 30. The last wines were pressed off October 12.
