1997 Cabernet Sauvignon, Lone Oak Vineyard

The 1997 Lone Oak Vineyard Cabernet Sauvignon is 100% estate-bottled Cabernet Sauvignon.  These grapes were picked in small lots in September 1997 with a median brix of 24.0. The wine was fermented to dryness in small, 100-gallon bins with punchdown four times a day.  The wine was then pressed off the skins and aged in eleven French oak barrels for 20 months.  231 cases were bottled.
